
Don't they look tasty?? Not only are about the easiest cupcakes in the world because of the mix, but they're impressive becaue of the detail work! Most of the time when I say 'easy' it either means that it is super fast to put together, or that it requires minimal ingredients, or both. This is both.

Easy Reeses Peanut Butter cupcakes
Ingredients:
- 1 boxed chocolate cake mix (and its ingredients)
- 8 oz. cream cheese, at room temperature
- 4 cups powdered sugar
- 4 tbsp. butter, softened
- 2/3 cup creamy peanut butter
- dash of vanilla
- Reeses peanut butter cups (24 small or 12 large)
- chocolate sprinkles for garnish
Method: Combine your cake ingredients together in a mixing bowl and set aside. Add your muffin cups to your cupcake pan and place a spoonful of batter into each cup. Next place either one big or two small reeses peanut butter cups into the middle of each muffin cup and cover the rest of the way with another spoonful or two of cake batter. Bake for allotted time on the box and allow to cool.
To make your peanut butter icing, combine together your cream cheese, peanut butter, vanilla, and butter in a medium mixing bowl until creamed together. Ad your powdered sugar one cup at a time till desired thickness. Pipe onto your cupcakes in a circular pattern and add a few chocolate sprinkles or a whole mini peanut butter cup to the top.
Serve immediately with napkins and milk, and enjoy!!

ReplyDeleteHello - could you clarify the directions on this - it talks about muffin cups, cups, and big or small cups. Not 100% sure on what to do . . .I think you put a peanut butter cup in the bottom of each cupcake liner and then add cake batter???? But I'm just checking - these look fabulous :-)
